Christmas Recipe
Figgy Pudding

Ingredients
|
- 250g Dried Figs
- 200 ml Milk
- 1 tablespoon Treacle
- 150 g Flour
- 100 g Brown Sugar
- 100 g melted Butter

- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 2 eggs
- Rind of 1 Lemon
- 50 g Breadcrumbs

You will need
Scissors, saucepan, mixing bowl, mixing spoon, 1 lt. pudding bowl, greaseproof paper, aluminium foil and string

Directions

- Cut stems from figs
- simmer figs in the milk for 25 minutes
- Remove from heat and mix in treacle
- In a mixing bowl mix flour, brown sugar, breadcrumbs, baking powder, cinnamon, nutmeg and the lemon rind
- Add fig mixture along with butter and beaten eggs and mix well

- Butter pudding bowl
- Spoon in mixture
- Cover with a layer of greaseproof then a layer of foil and tie securely
- Steam for 2 hours
- Turn out and dust with icing sugar
- Serve with whipped cream
