Christmas Recipe
Easy Christmas Pudding

Ingredients
|
- 460g Currants
- 460g Sultanas
- 230g Raisins
- 230g Citron Peel
- 115g chopped Almonds
- 460g Butter
- 460g Brown Sugar
- 9 Eggs

- 150 ml Brandy
- 230g Breadcrumbs
- 230g Plain flour
- 1 pinch Salt
- 1 teaspoon Bicarbonate of Soda
- 1/2 teaspoon grated Nutmeg
- 2 teaspoons mixed spice

You will need
A large boiler of water, mixing bowl, wooden spoon, knife and cutting board and pudding cloth .

Directions

- Clean and prepare fruit
- Blanch and finely chop almonds
- Cream the butter and sugar and add the well beaten eggs and brandy
- Stir fruit in well
- Add breadcrumbs, sifted flour, salt, soda, grated nutmeg and spice
|

- Mix well together
- Tie up in a strong pudding cloth being sure to leave some room for expansion
- Place in boiler of boiling water and cook for 6 hours
- Cook a further 3 hours on the day it is to be eaten
