Christmas Recipe
Christmas Cake

Ingredients
|
- 125g Dried Apricot
- 125g Raisins
- 125g Mixed Dried Peel
- 125g Currants
- 125g stoned Prunes
- 125g stoned Dates
- 2 tablespoons Brandy with Orange Juice to make 1 cup
- 500g Mashed Pumpkin

- 1/2 cup concentrated Apple Juice
- 3 cups Self Raising Flour
- 1 cup Plain Wholemeal Flour
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Mixed Spice
- 1/2 teaspoon Ground Nutmeg
- 6 Egg Whites
- 2 teaspoons Vanilla

Glaze
|
- 1 cup of Water
- 1 tablespoon Apple Juice Concentrate
|

- 1 tablespoon Brandy
- 1 tablespoon Agar
|

You will need
A sharp knife and cutting board, a mixing bowl, a sifter, a beater and a 21 cm X 8 cm square cake tin

Directions
|
- Chop the fruit
- Soak in the brandy and orange juice overnight
- Steam and mash the pumpkin
- add the pumpkin and apple juice to the fruit and mix well
- Sift the flour, cinnamon, mixed spice and nutmeg and mix.
- Fold dry mix into the fruit in three lots
- Beat egg whites until stiff
- Fold egg through the mixture and add vanilla

- Fully line cake tin, spoon in mixture and smooth
- Bake in a preheated oven at 160c for 2 1/2 to 3 hours
glaze
- Place glaze ingredients in a saucepan, bring to the boil and simmer for 2 minutes
- Add 1 cup of dried fruit and nuts to the hot glaze
- Position the solids on the cake then brush over the rest of the glaze
