- Place the chicken bits into a large saucepan and cover with water
- Bring up to a simmer
- Remove any scum on the top of your simmering liquid then add vegetables, bouquet garni and peppercorns

- Cover and simmer gently for 4 to 6 hours
- Strain the stock into a bowl, allow to cool then refrigerate
- When chilled, remove the fat from the surface
