Ingredients

- 350g freshly ground Almonds
- 350g Caster Sugar
- 350g Icing Sugar
|

- 2 small eggs
- 1 - 2 tablespoons strained Lemon Juice
- half a teaspoon Vanilla Essence

You will need
a mixing bowl, a wooden fork a flat clean work surface and some cling wrap
|

Directions

- Sieve the icing sugar and mix well with the sugar and almonds in a mixing bowl.
- Beat the two eggs.
- Hollow out the centre of the dry products and add all of the other ingredients into it.

- Mix well with the wooden fork before turning out onto a lightly sugared work surface.
- Kneed well until smooth and free of cracks.
- Work into desired shapes immediately or store in cling wrap until required.
