Ingredients

- 2 kg Potatoes
- 125 ml Vinegar
- 1 chopped Onion
- 125 ml water
- 125 ml Salad Oil

- 2 sliced Onions
- 125g Sour Cream
- Salt and Pepper to taste
- Finely chopped Parsley
- 2 hard boiled Eggs sliced

You will need
A large salad bowl, a large and a small saucepan, a sharp knife and a cutting board
|

Directions
|
- Boil the potatoes in their skins until tender and slice thinly while still warm
- Bring the vinegar, chopped onion and water to the boil in a small saucepan then remove from the heat
- Place a layer of potatoes in a large salad bowl and then a layer of sliced onion.

- Sprinkle salt, pepper a little oil and a few spoons of the vinegar mixture over
- Continue layering until potato and onion is used
- Gently fold in the sour cream
- Garnish with the parsley and sliced egg
