- Wash, drain and dry required lettuce leaves
- Carefully peel the oranges and slice into rings
- Peel the onion and slice thinly
- Lay out, on the lettuce, a slice of beetroot then a slice of orange then a slice of onion each slightly overlapping and looking attractive.

- Continue until all have been used.
- Sprinkle with the sugar
- In a jug or bottle add all the dressing ingredients and mix well
- Just prior to serving pour the dressing over your creation
- Serve at the table in a shallow dish with a serving spoon and fork
