Ingredients

- 2 kg Pumpkin
- 1 large chopped Onion
- 2 cloves crushed Garlic
- 1 pinch Curry Powder

- 2 small Egg Tomatoes quartered
- 2 Chicken Stock Cubes
- 1.25 lt. Boiling Water

You will need
A sharp large knife, a baking dish, a blender, a wooden spoon and a large saucepan

Directions

- Peel pumpkin and cut into 3 cm pieces
- Combine pumpkin, onion, garlic and tomato in a baking dish and drizzle with oil
- Bake at 250C for 40 minutes
- Blend pumpkin mix with crumbled stock cubes and 2 cups of water until smooth

- Put mixture into a large saucepan with the rest of the water
- Add a pinch of curry Powder
- Stir over heat until hot
- Serve with cream or yoghurt and fresh crusty bread
