Grandpa Pencil's

Recipe for
Pikelet

Ingredients
  • 250g Self Raising Flour
  • 6 teaspoons Golden Syrup
  • 2 Eggs

  • 125 ml Milk
  • 6 teaspoons Vegetable Oil
 

You will need
A mixing bowl, a sifter, a wooden spoon, heavy frying pan, spatula and a clean tea towel

 

Directions

  • Sift flour into a large mixing bowl
  • Make a well in the centre and pour in eggs and syrup
  • Mix well with a wooden spoon gradually adding the milk to form a batter the consistency of thick cream
  • Lightly grease the frying pan with the vegetable oil
  • place over a moderate heat

  • Drop spoonfuls of batter into the pan
  • Cook for about three minutes until the surface blisters
  • Turn over and cook a further 3 minutes until the underside is a golden brown
  • While the rest are being cooked keep the completed pikelets covered with a clean tea towel to keep warm
  • Serve hot or cold with butter or jam and cream
