Ingredients

- 250g Self Raising Flour
- 6 teaspoons Golden Syrup
- 2 Eggs

- 125 ml Milk
- 6 teaspoons Vegetable Oil
|

You will need
A mixing bowl, a sifter, a wooden spoon, heavy frying pan, spatula and a clean tea towel

Directions

- Sift flour into a large mixing bowl
- Make a well in the centre and pour in eggs and syrup
- Mix well with a wooden spoon gradually adding the milk to form a batter the consistency of thick cream
- Lightly grease the frying pan with the vegetable oil
- place over a moderate heat

- Drop spoonfuls of batter into the pan
- Cook for about three minutes until the surface blisters
- Turn over and cook a further 3 minutes until the underside is a golden brown
- While the rest are being cooked keep the completed pikelets covered with a clean tea towel to keep warm
- Serve hot or cold with butter or jam and cream
