- Set the oven to around 150c to preheat
- Separate the egg yokes from the whites
- Put egg whites into a bowl and beat very fast until the mixture looks frothy
- Add sugar and vanilla, a spoon at a time, while continuing to mix
- Beat the mixture until it looks shiny and stands up in stiff peaks

- Place greaseproof paper on your baking tray and spoon on small dobs of mixture trying to make each one attractive
- Pop into preheated oven for about an hour to an hour and a half
- Allow to cool and eat plain or cut and fill with whipped cream. If you are feeling really creative you can cut a little mouth and give it eyes to make beaut frogs
