- Place the two minces into the mixing bowl and blend well with clean fingers
- Add beaten egg, salt and pepper to taste and blend well
- Steam the peas until tender
- Dice the capsicum and onion, crush the garlic, finely chop the bacon and sauté together in a small amount of oil without overcooking
- Keep a little capsicum to place on top of your loaf
- Add in the steamed peas and sauté a little longer to blend the flavours then allow to cool
- Mix the cooled sautéed veggies well through the mince, with your fingers

- Lightly press half of the mixture into a loaf tin
- Line halved hard boiled eggs down the centre of the mixture and add the rest of the meat
- Press extra capsicum into the top of the loaf
- Cover with foil
- Place in the oven at around 190c for one hour
- Remove from the oven , take off the foil and pour off liquid / fat
- Return to the oven for a further 1/2 hour without the foil covering
- Allow to cool before turning out and slicing
- Great with mushroom sauce
