Ingredients

- 2 tablespoons Oil
- 2 Onions
- 1 or 2 clove/s crushed Garlic
- 1 teaspoon Turmeric
- 2 teaspoons Curry Powder

- 1 cup boiled Rice
- 1/4 teaspoon Ground Ginger
- 4 cups Stock (beef or chicken)
- 1 tablespoon Lemon Juice
- Salt and Pepper to taste

You will need
A heavy saucepan, a garlic press, a sharp knife and cutting board

Directions

- Thinly slice the onions
- Heat the oil in a heavy saucepan and gently fry the onions until soft
- Add turmeric, curry powder and ginger to the pan and continue frying for a minute
- Pour in the stock and bring to the boil
|
|
- Simmer for 10 minutes
- Add the rice and simmer for a further minute or two until the rice is heated through
- Add salt and pepper along with the lemon juice
- Serve in individual bowls with crunchy bread rolls
