Ingredients

- Leftover carcass from a roast chicken
- 2 large onions
- 1 bay leaf
|

- Frozen peas or mixed vegetables
- (Optional) carrot, potato, garlic, cabbage (Whatever you wish to clean-up)

You will need
A large saucepan, a wooden spoon, tongs, a cutting board, a sharp knife and a lot of imagination
|

Directions

- Take the seasoning out of your chicken carcass and place the chicken in a large saucepan 3/4 filled with water
- Add the roughly chopped onions and the bay leaf
- Bring to the boil then simmer until the bits of chicken fall away from the bone
- Carefully remove the bones from the water with your tongs
|

- Allow to cool a little then remove all of the residual meat
- Discard the bones and return the meat to the pot
- Add your frozen or fresh veggies with your desired consistency of the finished soup in mind
- Season to taste
- Simmer until you are happy with its taste and consistency
