- Gently heat the butter, sugar and golden syrup in a saucepan
- Remove it from the heat the moment the sugar and butter have melted
- Sift the flour, ginger and salt into the mixture, add the lemon juice and mix well
- Drop heaped teaspoons of the mixture onto greased baking trays

- Allow plenty of room for them to spread.
- Put no more than four dobs on each tray
- Bake at 180c for 10 minutes then allow to cool for about a minute
- Remove each from the tray with a spatula and quickly roll it around the handle of a wooden spoon
- Fill with cream when cool
