- Rub the sugar cubes on the lemon to absorb the full flavour of the zest.
- Place the sugar cubes, water and sugar into the saucepan and stir over a gentle heat until the sugar has dissolved.
- Increase the heat and bring to the boil without stirring.
- Boil to 132 c

- Remove from the heat and stir in the food colouring.
- Leave to stand for a few minutes before pouring onto the oiled slab or foil.
- When slightly cooled cut into appropriate strips with an oiled knife.
- With lightly oiled, clean, hands twist each strip and bend into a walking stick shape.
